Clinatro-Lime Vinaigrette

This is SOOOOOOOOOOO yummy! I simply cut up romaine lettuce, roma tomatoes, red onion, and an avacado and poured some of this dressing over the whole salad...it was YUMM to the O!

Cilantro-Lime Vinaigrette


Ingredients



  • 1 cup packed cilantro

  • 1/2 cup extra-virgin olive oil

  • 1/4 cup lime juice

  • 1/4 cup orange juice

  • 1/2 teaspoon salt

  • 1/2 teaspoon pepper

  • Pinch of minced garlic




  1. Puree cilantro, olive oil, lime juice, orange juice, salt, pepper and garlic in a blender or food processor until smooth.

Vege Lasagna

Vegetarian Lasagna Recipe

  • 8 oz. box of lasagna noodles
  • 1 25 oz. jar of organic / all-natural sauce (such as Dell’Amore)
  • 2 medium-sized zucchini sliced
  • 4 medium-sized squash sliced
  • 2 medium-sized tomatoes sliced
  • 8 oz. bulk mozzarella cheese grated
  • 8 oz. spreadable goat cheese
  • 12 slices of provolone cheese
  • 2 teaspoons of Italian seasoning
  1. Preheat oven to 425 degrees Fahrenheit
  2. Cook lasagna noodles according to package directions
  3. Drain water from noodles and rinse with cold water
  4. Spray 9 x 13 x 2 pan with cooking spray
  5. Cover bottom of pan with one layer of lasagna noodles
  6. Spread 1/2 of sauce over noodles
  7. Place 6 pieces of provolone cheese over noodles
  8. Spread 1/2 of goat cheese on provolone cheese
  9. Layer 1/2 of zucchini and squash over cheeses
  10. Sprinkle 1/2 of grated mozzarella cheese over vegetables
  11. Shake 1 teaspoon of Italian seasoning over cheese
  12. Repeat steps 4-10 for next layer
  13. After 2nd layer is completed take sliced tomatoes and arrange on top
  14. Bake for 30-40 minutes in center rack of oven
  15. Remove from oven when juices are bubbling and cheeses are melted
  16. Allow lasagna to cool for 5-10 minutes before cutting or serving

Garlic Red Potatoes

Garlic Red Potatoes Recipe
Garlic Red Potatoes

Ingredients

  • 2 pounds red potatoes, quartered
  • 1/4 cup butter, melted
  • 2 teaspoons minced garlic
  • 1 teaspoon salt
  • 1 lemon, juiced
  • 1 tablespoon grated Parmesan cheese

Directions

Preheat oven to 350 degrees F (175 degrees C).

Place potatoes in an 8x8 inch baking dish.

In a small bowl combine melted butter, garlic, salt and lemon juice; pour over potatoes and stir to coat. Sprinkle Parmesan cheese over potatoes.

Bake, covered, in preheated oven for 30 minutes. Uncover and bake an additional 10 minutes, or until golden brown.

After making this over a dozen times, here is my edited version: when looking for this recipe, I was looking for a "garlic herb" sort of potato. I cut the potatoes into quarters but the cooking time for this recipe, as most people have mentioned, is WAY off. After 50 minutes or so, my potatoes weren't even close to being tender and the rest of my meal was about to get cold so I decided to throw everything in the microwave for 10 minutes- usually, that's how I make my baked potatoes so tender. PERFECT SOLUTION, and I highly recommend it. I now put the baking dish with potatoes, 2 TBS butter, generous drizzle of olive oil, and garlic, herbs, etc. in the microwave for about 15-20 minutes - not only does it taste exactly the same, but it takes a third of the time and your potatoes will be tender, guaranteed. For herbs, I just use 1-2 TBS dried italian seasoning. I also use concentrated lemon juice rather than real lemon. PS - Stir the potatoes every five minutes while microwaving just to make sure they're all coated.

Home Goals

So, The Nester has put it out there.  She told the world her home goals for 2011 and in doing so makes it possible for us to do the same.  Its true we just moved into our home in October...but I honestly can't think of time that we haven't "just moved into our home".  As you know...we move alot.  I am hopeful that we'll stay here for at least a couple of years.  We'll see what happens then.  But for now....I will do all that I can to make my home a place of love and peace, and for it to be obvious when you walk through.  I'm off to a pretty good start....but as you'll see I have MUCH to accomplish.  Its QUITE possible that I won't get it all done this year, but at least I have a goal that will hopefully help me stay on track with my spending....again, we'll see what happens.  ;)

So, I'll start with my living room, since its the one mostly done. 

I'm looking at this picture wondering what others see when they look at the picture.  I wonder what they will say still needs to be done here.  Here's what I see:

  • Both chairs need to be slip covered
  • Paint walls some other color
  • New, larger rug
  • More greenery
  • Make more pillows for couch & chairs
  • Wall writings  - I'm not sure exactly where yet, but I want them.
And thats about it for now...I feel SURE that I'll do OTHER things to the living room BESIDES what I have listed here.  Oh well...

Next room: Dining Room
Ok...I'm not sure where to start, but here goes:
  • um...can you say WINDOW TREATMENTS...or mistreatments as The Nester calls them.  It is time.  In fact, this may be my first project.  I've got to do something.  btw:  I LOATH that sliding glass door, AND its placement.  Not sure what I'm gonna do exactly.  Considering taking the blinds off all together and just building a cornice like thingy...
  • Rug for under table.  This is a NECESSITY, honestly.
  • May be recover the chairs....I know, I know...I just did them...but I think they may be too busy...idk.  We'll see.
  • Better wall hangings
On to the Master Bedroom.  This is truly a room that I could use some inspiration for.  I really think I just need to start over from scratch...I mean, I may even repaint the furniture...who knows.  There is really no need for me to make a list here...it just needs HELP!



PS:  Don't mind the GREAT fabric laying over the REALLY HIDEOUS stool....I know, I know. 

And now for the Master Bath...equally as inspiration-less.
Seriously people.  I'll give it a shot:
  • I really would like to go with the "king and queen" idea in here.  All the crowns and stuff out right now are so great and I love the black and cream damask idea with that.  So as far as "stuff" goes, think CROWNS.
  • I'd like to paint the walls a deep red...or goldish/wheat color.  I know thats a little random, but whatever
  • Wall decal that says: Crowned with loving kindness
  • You can't see it, but there is a window above the tub, so window treatments
  • Frame the mirror out with a chunky gold frame-like wood...or something.
  • I might have to move the towel bar over to the left...
  • Figure something out for my makeup and hair crap...the plastic bin I'm using now functions GREAT, but has zero decorative value - obviously.
  • Monogrammed towels
The Little's Bedroom:

Ok...so for now, the littles share a room.  And so, we're pretty limited on space and room arrangement in here.  What you can't see is the closet doors that are at the end of the bunk.  Making this even more of a challenge.  But, here's my list:
  • Lower the window treatments and do something to make them more exciting.  
  • Wall decor...seriously.  
  • I think I need to rearrange the furniture, but I'm just not sure how yet, but I've got an aweful lot of wasted space.....ok...just back from rearranging. I basically just switched the two beds around, but pushed the bunk up against the back wall...anyway, not sure this is the best option, but its what i'm going with.
And finally, the Guest Bathroom:
I kinda like what I've started in here...but there are some OBVIOUS holes, like the big blank wall above the toilet [ehem].  There are some pics that I love at Bed Bath and Beyond...$20 each...and with the 20% off coupon, I could pick them up relatively cheap.  Just want to be sure I'm going the right direction before I spend the money.  Anyway....thats that wall.  This is the smallest room in the house, but still required two pics...so see below
Ok...so here's the second pic...lets talk:
  • Frame the mirror out
  • Add some greenery somehow
  • Warm it up in here...seems too sterile to me.
  • Wall decal above the door.  {I'm beginning to think it would be smarter for me to find great pieces of wood to put my "wall" decals on, since when I move, i can't take them with me...hmmm...thinking.....}
  • Art on the wall above the hand towel
There is more stuff, I know...but for now, thats all I can fathom.  Again, I won't likely get to *half* of this by the end of the year, but its good to sit down and organize my thoughts.  So thanks Nester!  You're the best!

Blissdom Conference 2011

For those of you who don't know about this conference, its a 2 (or 3) day conference for bloggers.  The best of the best go to this and the speakers are AMAZING!  I have been blogging for about 2 years now and am pathetic at it...I mean, I'm GREAT at reading my favorite blogs and finding other GREAT info...but keeping up with my own, I'm terrible at.  But, none the less, I would LOVE to go.  Mostly cause I would really love to have the chance to meet some of the GREATS!  My top three bloggers have always been Edie, The Nester, and Sandy.  But today, I was shown this AMAZING blog...full of amazing tips and tricks on how to keep your life and house in order and who knows what else....I'm excited to find out!  Its by Heather and its called Home Ec 101- Skills for Everyday Living.  Since I will soon be hosting The Home Experience by Devi Titus at my house, I think this is a GREAT site to have at my disposal.  I'm excited about stalking following Heather and learning from her, as I have the other three faithfully for 2 plus years now.  So much to learn about being better at what we're called to do.  So for those of you who stumble upon this post and have never been to any of the blogs I've mentioned...I would encourage you to dive in.  You'll be a better person for it...trust me.  ;)

It's Been a Long Time Coming

So, its been over a year since I posted last. Crazy...I know, and sooooo much has happened. I'm not sure where to start...or if I even should.  I kinda want to go thru the months and recap.  It will likely do my soul some good to see how the year has progressed.  My last post was in October of last year.  We were moving into a house that needed complete renovating.  I think we were smack dab in the middle of it when I wrote.  So, I guess I'll start with November and move forward.  Here we go:

November:  We've moved into our new house.  Its a little smaller than we're used to; a little older than we're used to; a little more work than we're used to.  But it has a pool.  We are prepared for the challenge...or so we think.  Time will be the tell, but I won't spoil the time-line.  I'm also on bedrest...still.  My blood pressure is climbing and November brings a few trips to the hospital for this or that.  But so far, Parker is staying put.  Again...time will be the tell. Even though I'm on bedrest, I sing at Kimmy and Clarks wedding.  Its a beautiful wedding and even more beautiful reception.  She is the most beautiful bride I've seen to date ;) (and by "to date", I mean...its November 2009...a certain girl has not become a bride yet).

December:  Blood pressure continues to climb and on Dec 7th its 180/118 and I'm admitted with plans to induce the next morning bright and early.  They started at 5:30...Dr Herd came in and broke my water at 7:20 and Parker McKay Campbell was born at 8:05am.  He was 7lbs 3oz (I think...I know, its terrible).  He was perfect and I was so happy to have him and take him home, with no complications.  Jeremy was set to ask MerMer to marry him on her birthday, but plans were temporarily thwarted.  I don't remember much about Christmas...but I feel sure we had it.  ha!  It did snow...on Christmas...and it was UH-MAZING!  And then a few days later...Jer popped the question and Kimber agreed...and we were off to wedding heaven.  Its a beautiful thing, true love.  I'm so happy they have found it.  

January: Rick and I have been married for 20 years.  Rick sets up a wonderful evening at the Hyatt Place in the BEST room.  We have a great dinner at PF Changs and then dessert at Reata.  It was a wonderful night, and I was very surprised.  He's a good man, and I'm a very lucky girl.  On the 28th, Jaxson turned 4.  His party is planned for February.

February:  The month of love.  Jaxy's birthday was  big hit.  We built a super hero obstacle course in the backyard and the kids got a certificate for finishing.  It was fun and Jaxson loved it!  Wedding plans continue...planning an outdoor wedding in June.  Should be great fun...and I will do everything I can to make it go as smoothly as possible.  Kimber is wonderful and I'm incredibly happy.

March: Mini and Pa turn 90 this year.  Amazing.  Mini is not doing so well....she has Alzheimers and its getting harder on everyone in that house.  We have a birthday party at Gran and Papa's and everyone is doing family pics for them.  I'm not exactly thrilled about this, since I just had a baby 3 months ago...but I'm getting over it.  Its far too important to let my vanity get the best of me.

April: I'm asked to help with the District Fine Arts Competition for the Assemblies of God.  The competition is the end of May, and most churches begin planning sometime in September.  But its our first year and we plan to take a small group and see what its all about.  I'm excited to be a part.  The BEST part about April is the visit we had from Rick's family from Maine.  Papa Roddy, Jody, Heidi, Bill, Tray, and Jayden came on the 20th and stayed a week.  We had an AMAZING time and felt richer for having a chance to know them.  I love them....and I love that Rick has family like this.  They are great.  

May: We head to the Fine Arts Festival in Waxahachie.  Its quite an experience and one that we will be better prepared for next year.  7 of the 12 kids make it to Nationals...I am ECSTATIC!  We have a lot to prepare between now and Nationals..and ALOT of money to raise...but we can do it!  I am sooooo proud!  Austin plays King Pharaoh in BCS's musical, Joseph and the Technicolor Dreamcoat.  He was amazing and it was alot of fun to see him enjoying all of that.  I was incredibly proud of him.  And then he graduates.  Sings Immoral Man at his graduation and makes me cry.  He has his whole life in front of him....his whole life.  We have a great graduation party for him at our pool and I think he is pleased.  He's a great kid and I love him. 

June: Kimber and Jeremy get married this month.  THE MOST beautiful wedding EVER!  Kimber was just stunning and I was so very proud.  The weather cooperated perfectly.  It was a beautiful 86 degrees at 7pm.  And it just got better throughout the evening.  Again, I was so proud.  And I got to see my brother and his beautiful bride, Maggie.  Oh...and Parker cut his first tooth.  Funny, huh?  On the home front, we are REALLY starting to enjoy our pool...I'm gonna have a killer tan before long.  Woot Woot!  Austin goes to Honduras and his life is shaken.  He's truly moved by the people there and everyone says that he's a natural.  What a gift we have in him.  

July: Birthdays and float trips and getting ready for Detroit!  Rick and Austin get a year older.  Its Austin's big 18...and Rick's [eh-hem] 43rd.  We have added Rachel Herman into the Campbell mix and she is turning out to be a breath of fresh air.  I'm excited to see what God has in store for those two.  We celebrated Austin's bday at Papa's Burgers and Rick's bday at Saltgrass.  The last weekend of the month we headed to San Antonio for the 2030's Float Trip.  Good times.  And this month Soul Sistas is birthed.  Born out of a desire to break down the walls between women and obliterate insecurities amongst us, 40 women converge upon Macaroni Grill for our first event.  It was great fun and I was thankful for the Lord's move.  We will see what comes of it.  For now, I plan one event at at time and only as He leads. 

August:  We start the month off with a trip to Detroit.  The kids do fantastic.  Probably not as well as they would have liked, but still very good.  It was a lot of fun and I am super glad to get to be a part of that.  Jeremy turns 20...he's finally not a teenager anymore :)  Thirty-one of us Soul Sistas see Eat Pray Love [eh] and eat at Cheesecake Factory. I continue to get darker. {YES!!!}

The book that is changing my life
September: The month that changed me.  I begin THE HOME EXPERIENCE class hosted by Rachel's mom, Brigitte Herman.  From the very first class, it has powerful impact on me.  Then she speaks at the Ladies Retreat, where I'm in charge of the games.  It was alot of fun, but Devi....wow.  There are not words enough to describe what this has done.  I decide almost immediately that I want to teach the class.  I make plans to begin in January.  But I gotta finish my class first. ha!  After months of trying to make our house work, we make the hard decision to move out.  Its just too much of a money pit.  Rick finds a GREAT house in Heritage Trace while I'm at the retreat.  We sign papers  4 days later and get approved to move in October 1st.  VERY EXCITING!  Soul Sistas does dinner Saltgrass style.  And we finally give So Long Insecurity Virtual Book Club a try...set to begin October 1st.

October: We move into our house.  Its great.  I'm happy.  Lots of furniture painting, lots of walks in the great neighborhood...its good.  Virtual book club not as popular as I had hoped...but thats ok.  Sissy and I walk the Susan G Komen with a couple of our Soul Sistas...that was an experience I won't forget!  Not much else happens this month.  Things will be picking up soon for the Christmas Splendor production happening December 5th.  Should be getting crazy.  

November: The month of Thanksgiving.  I've begun a weight loss challenge with a worthy competitor (wink) and so I can't let myself go completely over the holiday.  I manage to gain 2.5 pounds, but pull it back together right after that.  Said competitor is constantly bragging about how he's gonna win.  We'll see. We weigh on December 5th.  I'm determined to win.  Again...we'll see.  ;)  Much of the  month is spent in rehearsals and meetings about the Christmas program.  Its a bit different this year...but truly beautiful.  I'm excited.  I decide to host a TG breakfast at our house so that all the kids can attend their families events without conflict.  It was great and I think the beginning of a tradition.  Can't believe I don't have any pics of that morning (Kimber - you do...post them if you can).  The spread was GREAT and I was proud. That night we decorated the tree...all the kids were there, and I loved it.  Then the kids did the Black Friday thing, while we slept!  And the big news is that PARKER WALKED!  Such a big boy!

December:  The first week was full of nothing but getting ready for A Bethesda Christmas.  And it was well worth every bit of my time.  It was absolutely beautiful.  I am always so blessed to get to be a part of this production.  I have learned so much and it scratches an itch that I spend the first half of the year developing.  I love every bit of it!  After the musical is over, I find a bit of depression sets in...but not for long.  Its just hard to get back to "normal" (whatever that is).  But I don't have too much time to waste being sad...we have a birthday to prepare for!  And that brings us to where we are today, Parker's One Year Birthday Party!  It's hard to believe that its been a year.  He is an amazing boy and I have no good reason for not blogging about him before now.

For 20 years we have been celebrating boys' birthdays.  We've had simple parties and grandeous parties.  But this had to have been the least eventful, least planned out, least to do about something, party.  Poor thing...it stinks being child #4.  But he is sweet and certainly worthy of all the time, planning, and effort of a HUGE birthday party.  And just look at that face...what a cutie pie!  So that was our day today.  I'll spare you the story of how I'll try to be better about blogging more regularly.  Its one of those things that I just have to do as I feel it.  Tonight I felt it and it took me nearly 3 hours.  Crazy.  Good night bloggers.  Hopefully I'll be back sooner than later!

Moving

So it has, once again, been some time since I wrote. Not real great at this. Maybe it will be easier once we get moved into our new house and settle. The new house will be GREAT, but its going to be an ongoing project. I'm excited about having the time to make it all exactly the way I want it. Its MY house....one we will stay in for a very long time, hopefully. Rick has worked tirelessly on every room...with a little help from us. He really never ceases to amaze me. We have ripped out carpet and sheetrock, scraped walls and floors, repainted...re-textured....and the list goes on and on. And really...we're just beginning. So much still to do and we move NEXT week! It can truly be overwhelming if we let it. But I know we will make it and it will be wonderful to have something that is our very own.

Jaxson started Mothers Day Out at Bethesda last week. He really seems to love it. I will admit that I cried the first day I dropped him off. He has so much change going on in his little life. Lets see...biggest brother moved out, sissy moved back in, a new baby is coming, we are moving, mommy is now staying home, a totally different schedule, a new school. Anyone would say thats a WHOLE lot of change in any persons life...particularly that of a 3 year old. Overall, I would say he is handling it all very well....but we definitely have our moments. I try to be understanding...and still firm. Its a delicate balance...one I'm not sure I handle so well all the time. "Delicate" isn't exactly my forte. I do love that baby boy...he is my sunshine.

Austin has started a band with a few of his friends...all of whom are VERY talented. I can see this going very well. Lots of possibilities. Its interesting to see him move into this arena with such gusto and passion. He has all that it takes to make it...and I really do want to be supportive...but I won't lie, its hard sometimes. I STILL don't know how to fully rely and trust on God. I wish I were better at it. What a good opportunity for me to learn that just because things aren't going exactly the way I would plan for Austin, they aren't wrong. I love him so very much...and I want him to know that more than ANYTHING.

My new found love for blogging has been a fun addition to my life. I enjoy finding inexpensive ways to make our home beautiful....which comes in very handy at this time of renovation. I seriously need to begin posting pics of the new house and all the work that we're doing. Its sad that I missed the chance to get some before pics. It was a MESS, but its getting better and better everyday. I will try to do better in the future....

Autumn

Ok...its official...Autumn is my very favorite season. The colors are beautiful and the weather is beautiful and it just makes for a very nice setting to live life. This is my table scape. I've never been good at this, but my friend Jeri Butler helped me get started, for which I'm very grateful. The mirror in the background we've had for well over 10 years. I used etching cream and etched the "C" in it to make it one of my new favorite pieces in my home. I think I like monograms....and can't wait to do more. Tonight I bought my very first $5 box of freezer paper to begin monogramming more and more items around the house. :) So very exciting. As I do them, I will, of course, post pics.

Too Long...

So, its been entirely too long since I blogged. That makes for a very long blog, so I'll try to do the cliff notes version and catch up.

Jeremy is out of the house...moved into his apartment in Denton. The first night he left home, I cried for an hour....like, sobbed. Alas, my tears were wasted as he returned home the very next day. I told him that it was ugly and mean for him to tease me like that....he agreed. Its been a few weeks now and he's doing pretty good. Roommates are a bit sketchy...but Jer does superb in those environments. He's just a light that shines no matter how hard you try to hide him. I love that about him. He started his new job today as a physical therapy tech. Its in Frisco which is a bit of drive for him...but he's excited and so are we! I am anxious to hear about how his first day goes.

Upon Jeremy's exit...our long lost Sissy returned home. We are so very happy to have her back. I love her so much and do miss her when she's not around. It feels like things are as they should be.

Austin has found a new love interest. Taylor Gannon has entered the picture and its seems to be a good thing for him. She is different than others he's dated in the past. A bit younger (Sophomore), but relatively mature for her age. We'll see what comes of this. He has also started working at Salt Grass as a table runner, which he seems to enjoy. I am happy for him to find joy in is work. Thats always important. He balances an awful lot in his life...worship leading on Sundays, Wednesdays, and school chaple; school; a few jobs; and now a new love interest. Its a lot for a teenager, but he loves the fast paced life he leads. I do worry a bit that its too much for him, but I remember being that way too....so I gotta just let him figure out the beauty of laying around doing NOTHING all on his own. He will one day.

I have been in ultra nesting mode for about the past two months...which means, everyone in the house is at my beckon call. No telling what they will be asked to do. Thank God for people who love me and will do just about anything I ask. As a result, we have managed to spruce up the place quite a bit. New paint on a couple of walls in the living room, new dining room table in the kitchenette, some GREAT garage sale finds (my long lost addiction has been rekindled), cleaned out drawers and closets and all other tiny spaces, the beginnings of a new look in the playroom, and spray paint, have I mentioned spray paint??? OMG...what joy it has brought to my life! So, things are looking a bit different at our house...and for the better!

My baby bedding is underway. Cathy Ingrahm has graciously agreed to barter voice lessons for her son, Aaron, for the labor....most definitely MY GAIN! I love it all so much and will definitely post pics as we go. I am super excited!

I can't let this blog post go by without mentioning my little man, Jaxson. He is continueing to say the cutest things ever and I should be ashamed of myself for not posting them as they happen. The moments seem to come so fast. The most cherished moments have been the recent ones where, while lying next to me in our bed watching cartoons together, he has said something to the affect of "hey mommy, I wike waying by you all day", or "hey mommy, i wuv you". Its just the very, very best. Makes my WHOLE life! I love that boy! He seems to be getting used to the idea of little baby Parker coming along, and almost seems excited at times. I hope and pray the transition will happen relatively easily for him. I think it will. He's excited to teach him how to play cars and stuff. Its great to listen to him talk about it all. Should be a BLAST!

So, thats basically it. I will definitely try to keep up with life better than I have been. It just goes by so fast!

Bedtime with Jaxson

One of my favorite parts of everyday is bedtime with Jaxson. Our routine - well the routine we shoot for - is bath, bed to watch a little "tb", and then he comes to tell me he's ready for me to read to him. We read several books, not without interuption. Sometimes the interuptions pertain to the book I am reading and other times...not so much. Could be anything. He tells me stories about his day, tells me about his favorite colors, tells me how hungry he is and how much he needs a snack, and then whatever other random thought comes to mind. Last night, I didn't do bedtime with him, his daddy did. When he asked daddy for a snack, he specifically requested "green ham and ham". Thats what he calls it - green ham and ham. After explaining that we hopefully didn't have any green ham, daddy brought him peanut butter crackers and he seemed fine. The "tb" watching portion of his routine actually took place in our bedroom last night. It was just he and I. I asked him if he would hold my hand and he just came over to me and laid his head on me and started patting my tummy. Then he raised up a bit and just smiled this very sweet smile and went back to his side of the bed. So stinking sweet! Then he held my hand. :) I do love that boy....and the best part is, he loves me too!

The Weekend

Well, we made it thru yesterday. Jeremy left for Hondorus with the Loli team. He will be gone a week. On Thursday we are heading over to his apt in Denton to get him all set up. When he returns, he will be calling that his home. Its hard to imagine our life with less of him around...but I know its all part of the plan. For that, I am grateful and at peace.

On a happier note, Jaxson is getting more and more brave in the water as you saw in yesterdays picture blog. He just said, "hey mommy, watch this", and he dove his head under the water. It just took a little coaching to get him to kick his feet and try to swim. I was AMAZED! Its fun to see as they develope and learn.

Austin spent part of his weekend preparing for chapel today at BCC. He is excited to be the worship leader this year. He has a GREAT group including Kylee Lyles and Aaron Ingram. My hope is that he will learn more and more about leadership. I know he will. He is a great leader in so many way, and yet has so much to learn. I am so very proud of him....proud beyond belief. I wish I could be at chapel today, but with all the work I've missed as of late, I just don't think its a good idea. But I will try to make this my last missed chapel. :)

Last night, Daddy, Sissy, and I went to see Julie and Julia. For Food Network junkies like ourselves, this was an outstanding movie. We all left pretty hungry after watching all that food prepared, so we went to Flips burgers to grab a quick bite. Made for a late evening, but it was worth it.

Got the house spic and span on Saturday...found two GREAT pics for my bedroom. I actually found one for my living room, but it was too much for this week. Its great though...I'll see if I can post the pic. Overall a great weekend. Can't wait til I can be home more often. I love that place.

Last Days

Well, I've thought long and hard about what to post as my first official blog post. I decided that while there is alot going on in our home these days, I should most definitely start off with the first one to come into our lives, and now the first one to move out. Jeremy Alan Campbell.

WOW! Its hard to believe that the one-time baby boy who first changed our lives forever is now a grown man, ready to face the world all on his own. I can honestly say that I could not be more proud of him. He is everything a mother hopes for in a son. He is strong and courageous, gentle and kind, caring and compassionate. He takes pride in doing what is right, not by the world's standards, but by our Heavenly Father's. He is a hard worker, diligent in his studies, and he loves his family.

And now he ventures off to the world of UNT. Denton...a short 30 minute drive from home. Why does it seem so far away? I don't think its the distance as much as it is the end of a chapter. A really, really GREAT chapter. I know that its right; its the way the story is supposed to go, but....

Jeremy will do great. I know we will all watch with amazment as he continues to yeild his life to God's purpose. No one seems to do it with more grace than Jeremy...such an example to us all.

So here's to the next chapter. I know some of the key characters, and I promise that if you watch...you will NOT be disappointed. You will see the hand of God at work in and thru the life of Jeremy Alan Campbell. A wonderful son...an amazing young man. I love you Jeremy.
